Why are supplements so hard to flavor?
You are hiding a taste, not creating one. The active ingredients are in there at doses you can taste, and cutting them would defeat the product.
In most food categories the functional ingredients are neutral and the flavor is added to make the product distinctive. In supplements the functional ingredient tastes strongly of something unpleasant, is present at a dose fixed by the label claim, and cannot be reduced.
That inverts the development process. The flavor brief starts from a defect.
Supplement doses are set by efficacy and by what the label claims, not by palatability. Twenty-five grams of protein, three grams of creatine, a full electrolyte profile, a gram of beta-alanine — each is a fixed quantity the formulator has to work around.
This has a consequence people underestimate: masking does not scale linearly. A system that works at 20 g of plant protein will not necessarily hold at 30 g, and a masking package validated on one dose has to be revalidated if the dose changes. Dose changes late in development are common and they are not free.

Powders face dissolution and segregation issues that present as flavor problems. An undissolved particle is a concentrated dose of off-note on the tongue, and a segregated blend means the first serving and the last do not match.
RTD exposes the actives to a heat process and a long shelf life, during which protein systems develop cooked notes and plant systems oxidize.
Gummies bring heat during depositing, acid in the formula and a limited actives payload per piece. They also let consumers eat several, which changes the dose calculation.
Capsules and tablets avoid the problem entirely, which is a legitimate answer when the active is genuinely unmaskable at the required dose.
